True ceremonial grade matcha is selected from 1st harvest tencha in spring time. The tea has to be grounded in traditional stone mills. The matcha colour is bright green, creamy when whisked, and has very minimum bitterness. Our source comes from Yame in Fukuoka prefecture and Uji, Kyoto, both of the top matcha-producing areas in Japan. Our matcha is sweet and smooth, rich in umami flavour and complexity.
