Silver Needle also goes by the name Bai Hao Yin Zhen – a very delicate and prized white tea from Fuding, in eastern Fujian. Only the highest quality leaf shoots are selected to produce Silver Needle. These divine pieces of ‘silver’ are then processed the minimum of amounts to retain the most polyphenols, antioxidants and amino acids. The brew displays a bright light-yellow colour due to floating white ‘needles’ that reflect light, a gentle floral aroma, smooth and refreshing taste and a delicate sweet lingering finish.
Note from Ms.Cattea: Under a good storage condition, the taste of aged Sliver Needle will become more mature and smoother, which is more gentle to drink and has less exciting effect on the stomach. The market value of 5 years old white teas can be twice expensive as the fresh ones.
Brewing instructions: Take 1 full teaspoon per cup ( 2 teaspoons for a stronger flavour); 90°C fresh boiled spring water; 1st brew - 30s | 2nd brew - 60s or more for stronger flavour.
